If there’s one dish more difficult to pair with wine than already tricky tomatoes it’s gazpacho, the chilled Spanish summer soup that includes raw onion and peppers as well. So what wine should you pair with it?

Hard to see where the beetroot stops and the bowl begins with this delicious beetroot borani I rustled up from a bunch a neighbour kindly donated from her garden. It’s the crushed broad beans with goat’s cheese and preserved lemon salsa. Although he makes it with frozen broad beans and peas which makes it a brilliant storecupboard standby I made it with fresh given both are in season - just the perfect taste of summer.
